<p>Bruin is a true Yorkshire mild beer. A mix of three malts, one being dark chocolate, giving a soft bronze colour. The combination of English goldings and fuggles hops, gives off a sharp wild blackcurrant after taste with a smoothness to follow. Worthy of the great tasting old style milds.</p>

<h4>For the base</h4>
<ul>
<li>50g Butter</li>
<li>150g Plain chocolate digestives biscuits, crushed</li>
</ul>
<h4>For the filling</h4>
<ul>
<li>300g White chocolate in small pieces</li>
<li>400g Full fat cream cheese</li>
<li>2 Eggs</li>
<li>150ml Soured cream</li>
<li>1tsp Vanilla extract</li>
<li>200g Fresh or Frozen raspberries.</li>
</ul>
<h4>Method</h4>
<p>Pre heat the oven to 160C/Gas mark 3.</p>
<p>Grease a deep 20cm springform cake tin and line the base with baking parchment.</p>
<p>Melt the butter in a pan over low heat.</p>
<p>Stir in the crushed biscuits and press evenly over the base of the prepared tin.</p>
<p>Chill in the fridge to firm up.</p>
<p>Melt the white chocolate, stirring occasionally with a spoon until runny and smooth and allow to cool slightly.</p>
<p>Whisk the cream cheese and eggs together in a large bowl until smooth, then add the soured cream and vanilla extract and whisk again until the mix is completely smooth. Stir in the melted chocolate until evenly combined, gently fold in the raspberries.</p>
<p>Pour this mixture over the biscuit base and spread evenly. Bake in the oven for 45mins until firm around the edge and just set in the middle. As you remove it from the oven run a small pallet knife around the cheesecake and leave to cool in the tin. The surface may crack slightly in the middle, but don’t panic, this is part of its charm! Once cool, chill in the fridge.</p>
<p>To serve release the outside of the tin leaving the cheesecake on the base. Dust with coco powder and cut into slices. Serve topped with raspberries or strawberries.</p>

<p>Stephen has worked in a number of successful restaurants in North Yorkshire, mostly around the Wetherby and York area, including Singers in Tadcaster and The Spice Box in Boston Spa.   Stephen and Claire have worked together for a number of years at both the Bay Horse in Kirk Deighton and The Crown at Roecliffe so they both have the skills to make your visit a pleasant one.</p>
<p>Old Glen House underwent an extensive refurbishment, to make the restaurant and side bar once more become an exciting place to enjoy a wonderful meal.   The refurbishment included a child friendly play area and an outside seating area that is also safe for children.</p>
<p>Stephen sources many of his ingredients locally and has set up a herb garden to use in his recipes.   All the meals are hand made in the kitchen, nothing is frozen, except the ice cream – which is also hand made!</p>
